Audio, photos and documents are cut into equal 4 MB pieces with random names, each sealed separately. From the outside there is no way to tell how many notes you have, how long they are, or which piece belongs to what. Transcripts, summaries and the search index live in an encrypted database.

Most of the internet protects keys with RSA or elliptic curves. A large quantum computer running Shor's algorithm breaks both — and data copied today can simply wait for that day. This is called harvest now, decrypt later.
Quantum computers barely dent symmetric ciphers: Grover's algorithm halves their strength, so a 256-bit key still leaves 128-bit security. That's why every step from your words or your face to your data in VoiceJots uses 256-bit symmetric cryptography only. No RSA, no elliptic curves, nothing for Shor's algorithm to attack.
